Does the "YESS DVB-T4688U MPEG 4 HD Twin Tuner PVR 500GB HDD + USB connect" allow a live program to be recoded, then paused during recording and then watched until the recording has caught up with 'real time'?

Yes, the DVBT 4688U supports a feature known commonly as timeshift. Basically, the unit can be set to automatically record constantly to a temporary file. THis allows the user to pause and rewind live TV, or even fast forward in certain circumstances (A buffer must be set using the "Timeshift start on pause" function.
